Chana Dal
Ingredients:
14 oz. can fire roasted tomatoes with green chilies
(Muir Glen Organic brand is good)
1 1/2 cup Chana Dal (pick over and wash)
1 large onion roughly chopped
5 – 8 peeled and left whole cloves garlic
1 green Bell Pepper – chopped
1 quart chicken broth
2 cups water
Preparation:
Place ingredients above in to pressure cooker and cook under full pressure for 10 min.
To cook Dal in regular pot, bring to boil, then simmer, covered, till dal is soft, approximately 1.5 -2 hours.
Optional: Use immersion blender for smooth & thick consistency.
Add:
2 teaspoons cumin powder
1 1/2 teaspoon sea salt
Simmer 10 minutes or so to blend flavors, stirring occasionally.
The Finishing Touches:
In separate frying pan – fry 1 diced fresh onion in 1-2 Tbsp butter or oil of choice until toasty brown.
Float toasted onion on top of soup, or stir it in. Serving with lemon wedges and squeeze over dal to bring out flavor. Enjoy!
